Mastering the Art of French Cooking

Mastering the Art of French Cooking is a two-volume cookbook by the American Julia Child and the French Simone Beck and Louisette Bertholle, which was written specifically for the US market. Volume 1 appeared in 1961 and Volume 2 in 1970. The work contributed significantly to Julia Child's long career as a television cook and cookbook author. The three women had previously run a cooking school in Paris .

The two volumes influenced the style of American cuisine like few other cookbooks. Julia Child in particular became a household icon in the United States thanks to these books , whose influence can only be compared to Martha Stewart . Volume 1 explains the basics of French cuisine . The attempt is made to do justice to both the complexity of the kitchen of an Auguste Escoffier and the possibilities of an American amateur chef . Traditional French dishes such as bœuf bourguignon , bouillabaisse and cassoulet are presented . Vegetable preparations that differed significantly from the American cooking style of the 1960s are also explained.

Volume 1 of the work has been published several times, revised twice. The first revision appeared in 1983 in order to better meet the changed technical equipment of the US American households. The second revision appeared on the occasion of the 40th anniversary of the first publication. This version contains, among other things, a history of the book. The first volume also deals with the French art of baking , which is dealt with in much more detail in the second volume. This only appeared in 1970, in which Louisette Bertholle was no longer involved.

Numerous cooks have repeatedly pointed out the profound influence this book has had on them. Ina Garten wrote in the introduction to her first book that she had studied the first volume like the Bible.
