Bœuf bourguignon [ bœf buʁ.ɡi.ɲɔ̃ ] is a meat dish from the French Burgundy . It is named after its two main ingredients: beef (le bœuf ) and Burgundy wine (le vin bourguignon ). The Burgundy region is known for cattle breeding, especially the Charolais breed , and viticulture , for example on the Côte de Beaune .

preparation

For boeuf bourguignon pieces of beef in red wine, are veal stock with mushroom sections and a bouquet garni braised . After two-thirds of the braising time, the braised stock is poured through and then supplemented with mushrooms seared in butter, diced bacon and glazed onions.

Bourguignonne dishes in classic international cuisine

In classic international cuisine, the addition à la bourguignonne (Burgundy style) to meat dishes describes a garnish in which the meat is braised with red wine or deglazed and served with glazed onions, fried bacon cubes and mushrooms fried in butter. Well-known Burgundy-style preparations are beef ragout and braised oxtail, in which demiglace is added to the stewed stock .

The Bœuf bourguignon gained new fame through the film Julie & Julia , which revolves around the hobby chef Julie Powell and her blog and in which Bœuf bourguignon is one of the main dishes.

In Superman comics , Bœuf bourguignon (as beef bourguignon with ketchup ) is the title character's favorite food and is used by him to inform his wife Lois Lane in coded form that everything is okay.
