Nutritional table
Nutritional value tables are directories of the nutritional value , i.e. the content of essential substances in food, as a working aid in nutritional science .
The information is determined by food laboratories, partly on behalf of the manufacturer. The information about the physiological calorific value (given in kilojoules or also kilocalories ), content of proteins , fats , unsaturated fatty acids , carbohydrates and salt are often given by the manufacturers themselves. Typical further nutritional information includes the values of fiber , vitamins , provitamins and minerals . Additional information can be recommendations or additional tables with regard to obesity , diabetes mellitus , gout , hypertension , osteoporosis and similar diseases. The typical reference value for the information is 100 g of the food. Information about typical portion sizes is therefore helpful .
Nutritional databases
The values of the federal food key database of the Max Rubner Institute with 14,800 foods and up to 131 nutrients each are subject to a fee. Another fee-based nutritional table is the "Souci-specialist-herb" database from Siegfried Walter Souci , Walter specialist and Heinrich Kraut.
The 2014 nutrition table of the German Nutrition Society contains information on around 1,300 food products.
The University of Hohenheim's database is freely accessible with data on around 1000 foods.

The food consumed can be compared with the values for the daily requirement . The daily requirement depends, among other things, on age, gender, activity and body weight.
