Post- processing is a sub-process in food processing during the preparation of meals .
Since meals are often not consumed immediately after preparation, they can be influenced by post-processing methods. These serve to limit unwanted changes in condition, to improve nutritional physiology and to ensure that the dishes are served as required .
A basic distinction is made between:
- Temperature control process : keeping warm , heating , cooling
- Refinement processes : seasoning , glazing , flambéing , garnishing
- Serving method : portioning , carving
