Ox mouth salad
Ox mouth salad (French Salade de museau de bœuf ) is a meat salad made from beef mouth meat with a simple vinegar / oil vinaigrette . He is mainly known in southern Germany and Austria .
For the preparation, the previously cured mouth meat is boiled, cut into very thin, bite-sized slices and dressed with white wine vinegar, neutral vegetable oil , chopped onions , salt and pepper and, if you like, with chopped pickles or herbs .
Ox mouth salad is traditionally served with bread or with fried potatoes .
Ox mouth salad is also offered as a commodity . According to the guiding principles of the German Food Book , it should consist of at least 50% beef mouth.
