Oscypek
Oscypek or Oszczypek (plural: Oscypki or Oszczypki ) is a goral ( i.e. both Polish with regard to the northern part of the Subcarpathian Mountains belonging to Poland and Slovak with regard to the southern part belonging to Slovakia) elastic hard cheese made from sheep's milk with natural rind. This cheese has been made according to a simple recipe for centuries. It is pressed into balls and hung to dry on the ceiling of mountain huts and smoked . The cheese has a salty taste, a fat content of 40 to 60% and is aged for two to three months.
Oscypki can only be named cheeses made by sheep farmers in the Tatra region ( Podhale ) of Zakopane . Oscypek has also been an EU-protected designation of origin since 2007 .
A very similar sheep's milk cheese is known as oštiepok in Slovakia . Similar Polish cheeses (made from cow's milk) are gołka and the smaller redykołka .
