Pancetta

Pancetta arrotolata

Pancetta is an Italian version of pancetta from the pig . It is seasoned, salted and air-dried with herbs such as rosemary and sage , and occasionally lightly smoked .

The fatter pieces are processed whole and mainly used as a cooking ingredient (for example for spaghetti alla carbonara ). Less fat pieces are rolled and stuffed into intestines. This pancetta arrotolata is also served as cold cuts.

Because of the way it is made, pancetta is particularly mild, aromatic and tender.
