Polonaise (set)

Polonaise is from the Polish cuisine originating set , to vegetables such. B. cauliflower , Brussels sprouts and asparagus or served with fish .

For preparation, freshly grated breadcrumbs are browned in plenty of melted butter and mixed with hard-boiled, chopped egg and chopped parsley . A simpler variant, which consists only of breadcrumbs browned in butter ( beurre polonaise ), is also common.

A distinction must be made between the polonaise and the classic garnish à la polonaise (Polish style) with poultry and the Polish sauces .
