A roulade needle is a narrow, elongated, rounded piercing tool with a point and an eyelet at the opposite end. It is used to keep roulades made from different types of meat and cabbage in shape and to prevent them from opening during cooking . In the form of Roulade pins short resemble shashlik - or skewers of metal, but only about ten  centimeters long. The needles are made of rustproof metal , usually wire with a diameter of about 1.4  mm . The eyes serve as a grip aid when piercing and later pulling out the needles; At the same time, they form an end stop when the needles pierce the roulades.

Moreover Roulade pins are partly as an aid in Bridieren of fish and meat to the food by shaping and / or introduction of fixing of fillings used.
