Kitchen thread (made of twisted cotton threads)

Kitchen twine , also known as kitchen , grill and / or roast cord , kitchen cord or roll roast thread , can be used in many ways when cooking . The special yarn is used primarily as an aid when shaping meat , fish or vegetables to fix the food, such as wrapping , bridging and barding . It is used in particular for roll roasts , roulades made from meat or cabbage and for shaping poultry . It is also used for bundling, dressing and rolling food.

Kitchen twine is made from food-safe, tasteless, boil-proof and roast-proof cotton yarn, which is usually twisted from two or three threads and is around 2.5  mm or more thick . It is commercially available in several colors, but mostly undyed, and as a ball. Sometimes it is offered together with a thread dispenser with a cutter and thread brake, which is available as a "string box" or "cord box" or similar. made of metal or plastic but is also available separately.

Related products are sausage thread and ham thread , sometimes also referred to as butcher thread , ham thread or butcher thread . They consist of a twisted , very tear-resistant yarn or "thread" of around 2.5 or 1.5 mm or more, which is two or three threads and is typically red and white in the ham thread. Sausage twine is used in meat production and processing, for example in sausage production to tie the individual sausages. It is also made from food-safe and heat-resistant cotton. In addition, sausage yarn is now also made and offered from waterproof and heat-resistant plastic yarn in various colors; partly in the form of pre-made so-called sausage twine loops that can be attached with automatic clippers . However, the synthetic yarns should not be brought into direct contact with fire, otherwise the synthetic fibers will dissolve.

Cotton sausage twine can sometimes be used as a substitute for kitchen twine; However, this does not apply to those cotton sausage yarns with a somewhat coarser fiber structure (“string-like”), as fiber components can get into the food . Sausage twine made of plastic, on the other hand, is completely unsuitable as a possible substitute for kitchen twine , as it can dissolve at high heat (e.g. when searing ) or over an open flame (e.g. when grilling ).

When using it, it is generally important to ensure that the unused thread spool or the remaining thread does not come into contact with meat juice etc., as it can otherwise rot. The twine is inedible and is usually removed before serving and serving .
