Shashlik ( Russian шашлык from Tatar šašlyk or Šašlik ), rare shashlik , is a name for a grilled or fried, usually marinated meat skewer .

Shashlik is a traditional snack in Turkish-speaking countries , Russia , the Caucasus and parts of Southeastern Europe (including Serbia and Hungary ), where they are offered at stalls. Many of the shish kebab recipes that are widespread throughout Russia originally came from the Caucasus. Shashlik has become known in numerous variants in Western Europe, the term often being used synonymously for grill skewer. There are also shish kebab recipes with fish and seafood or just vegetables .

The skewers consist of mutton or lamb , beef and pork , often supplemented by other ingredients such as vegetables, e.g. B. onions , peppers and tomatoes , or slices of bacon , kidney , liver , small sausages , etc., which are alternately put on the skewers with the meat. To prepare shashlik, the meat is first cut into smaller cubes and marinated for hours or days, which gives it its special taste and makes it more tender. After putting them together with the other ingredients on simple wooden or metal skewers (see pictures) and briefly roasting them over an open fire or hot embers, shashlik is usually consumed straight from the skewer, without sauce or other spices. The usual side dish is bread , in some countries also rice or raw vegetables , in Russia also boiled potatoes. The traditional typical shish kebab grill is called Mangal .
