Shish kebab
Schisch Kebab ( Turkish şiş kebap for "skewer with grilled meat", Masanderan / Persian شیش کباب shish kabāb ) is a traditional grill skewer from Turkish cuisine made from marinated lamb , tomatoes and peppers .
For preparation, fat-free meat is first diced from the leg or shoulder of (male) lamb and in a marinade made from olive oil, milk, grated onions or onion juice, salt and pepper and, depending on the recipe, garlic , cumin , cinnamon , cayenne pepper , thyme and mint inserted for several hours. Then the pieces of meat are alternately placed on skewers with tomato and pepper pieces and grilled over charcoal . The vegetables can also be left out or grilled separately.
Shish kebab is served with side dishes such as rice or bulgur , cacık , salad, fresh herbs and pide (flatbread).
Variants of the shish kebab are also made from other types of meat and poultry or fish and with other vegetables such as aubergines and are widespread throughout oriental cuisine and that of the Balkans . In Greece, a similar dish as is Souvlaki known in Serbia and Croatia as Raznjici and in Russia as a shish kebab .
