Arrosticini all'abruzzese are grilled meat skewers made from lamb and an Italian specialty from Abruzzo .

The meat is cut into small cubes or strips, sticking fat is not removed in order to make the arrosticini more juicy and aromatic. Then the meat is marinated with olive oil , marjoram , garlic , salt and pepper for several hours . Finally, the meat is put on skewers and cooked until crispy on a special charcoal grill. The arrosticini are served immediately.

As in the other central Italian regions of Umbria , Lazio and Tuscany , shepherds and their herds are part of the landscape and gastronomic tradition in Abruzzo . The recipe for arrosticini is said to come from shepherds who camp with their sheep in the pasture.
