Souvláki (also Souflaki , Greek σουβλάκι ) is a grilled dish in Greek cuisine .

Etymology and Origin

Souvláki literally means “skewer” ( singular ). In Athens the dish is called "Kalamaki". The preparation of meat skewers was common in Greece 3000 years ago. The court in its current form and under its current name can be verified for the first time in the late 1960s.

preparation

The dish consists of pork pickled in oregano , salt, pepper and lemon juice, which, after marinating, is placed on wooden skewers and grilled over charcoal embers. Sometimes lamb or chicken is used for souvláki .

In Greece , Souvláki is offered at snack bars and in fast-food restaurants in larger towns and cities. In Greece, souvláki is either enjoyed "pure", on a wooden skewer, usually with a little lemon juice, salt, oregano and a slice of white bread, or served as a hand dish under the name of "souvlaki pita": without a skewer, wrapped in a pita bread with tomatoes, onions , Tzatziki and french fries . However, it is also available as a plate dish in the restaurant.

variants

In Turkish cuisine , it is consumed as a shish kebab with marinated lamb, tomatoes and peppers . In Cypriot cuisine , crushed juniper berries are added to the marinade . In the Serbian and Croatian cuisine there is a comparable dish called Ražnjići .
