Salată de vinete

Salata de vinete ( German  eggplant salad ) is a traditional Romanian puree made from fried eggplant .

The eggplant is grilled or baked in the oven until cooked through. The black peel is peeled off and the stalk is removed. The pulp is chopped very finely and seasoned with lemon juice , salt and black pepper . Then, like a mayonnaise , it is whipped with vegetable oil . Do not use virgin (cold-pressed) olive oil .

The aubergine salad is usually served with tomato slices and finely diced onions, and Telemea and grilled peppers are often served with it. Sometimes mujdei are also mixed in.

Lately, the salad is often mixed with mayonnaise, which is more calorie-rich and detrimental to the eggplant taste.

The dish is served as a starter with slices of white bread.
