Salo ( Hungarian : szalonna, Russian , Ukrainian : са́ло and Romanian : slănină, Bulgarian сланина) is six to ten centimeters thick back fat matured in salt and spices in Eastern European cuisine . It is similar to the Italian lardo .

For production, the bacon is seasoned with salt , pepper , garlic or paprika and stored in a wooden box for up to a year to mature. It is then cut into manageable pieces for sale.

You eat Salo in very thin slices with black bread and pepper or garlic with vodka ( Horilka in Ukraine). It is also used fried or boiled in various dishes and left out to cook with the fat.

Salo is traditionally stored in a pantry on a meat hook, protected from light and heat. The specialty can be kept for several years.
