Ravigote sauce

As ravigote sauce refers to various cold sauces:

A sauce made from vinegar and oil mixed with chopped capers , onions and tarragon . To prepare, you create a reduction of white wine and tarragon vinegar, cook it with veal velouté and let it cool down. Then this is whipped with shallot butter and mixed with chopped tarragon, chervil and chives rolls.

It is also synonymous with herb mayonnaise .
