As Schank loss is referred to in the restaurant the shrinkage during commercial serving of beverages which the profit reduces the catering operation.

Reasons for the loss of serving can include:

  • Booking errors or forgotten bookings on the POS system
  • Spilling glasses
  • Broken bottle
  • Overflow, especially when serving spirits
    • unintentionally z. B. with increased stress
    • intentionally to attract a regular audience or to increase your own tip
  • Too much foam or splashing when tapping the barrel

Loss of serving can be minimized by various measures, but not completely prevented. Booking errors can be avoided by setting up technical dispensing controls, which require a mandatory cash booking prior to serving. Exact tests showed, however, especially in large discos in individual cases, that more than 10% were lost due to careless tapping, spilling and knocking over the glasses. If unauthorized free drinks are given to third parties by the staff, the loss of drinks can increase to 20% to 30%.
