Signe Tillisch is an old apple variety that originally comes from Jutland . It originated around 1860 as a seedling in the garden of Hardesvogt Tillisch in Bjerre near the East Jutian town of Horsens . Tillisch named the variety after his daughter Signe. The original tree was kept in the bucket and moved to the Rosenvold manor near Vejle and planted there.

The fruits of Signe Tillisch are yellow to green-yellow (on the sunny side sometimes slightly orange), large and wide and quite angular. The flesh is juicy, the taste fresh and aromatic. Harvest time is usually the beginning of October, the fruits can be stored until Christmas. Signe Tillisch is an excellent table apple, but it can also be used well for baking and juice production.

The tree is quite strong-growing, long-lived and can still bear a lot of fruit even when it is old. The variety is also suitable for trellis keeping. The variety prefers warm loamy soil, but does not depend on high temperatures.

Signe Tillisch was one of the most popular apple varieties in Denmark at the beginning of the 20th century and was also widespread in northern Germany. However, it has since been supplanted by more economically profitable varieties and is considered endangered. Many specialized tree nurseries in Denmark and Northern Germany are now offering the variety again.
