Soy yogurt is a fermented food made from soy milk that is similar in properties to yogurt .

Manufacturing

Soy yogurt is made by fermentation, similar to cow's milk yogurt. Soy milk is mixed with lactic acid bacteria , usually Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus salivarius subsp. thermophilus , which curdles the soy milk and creates a firm yoghurt-like product with a slightly sour taste. The consistency is a little softer than cow's milk yogurt, which is why thickening agents are sometimes added.

As with yoghurt, it can also be made at home - by adding yoghurt ferment or ready-made soy yoghurt to soy milk at body temperature in a yoghurt maker . This creates soy yogurt after a few hours of fermentation. The procedure can be repeated as often as required. Firmer soy yogurt can be made by adding sugar to the soy milk before fermentation (maximum 10 g per 1 liter of soy milk). Soy milk naturally contains hardly any sugar, whereas cow's milk contains around 5%. Sugar serves as "food" for the lactic acid bacteria and thus promotes fermentation. The soy yoghurt obtained is acidified more intensely in terms of taste.

100 g soy yogurt pure, without fruit preparation , have an average energy content of 245  kJ (59  kcal ) and contain 4.7 g protein , 3.2 g carbohydrates and 2.7 g fat . Depending on the product and manufacturer, these values ​​may vary slightly. Soy yoghurt also contains isoflavones and is usually fortified with calcium by the manufacturers .

Soy yoghurt is free from gluten , cholesterol , milk protein and lactose . People with a cow's milk allergy or lactose intolerance can therefore consume it without any symptoms. Since it does not contain any animal products, it is also suitable for a vegetarian or vegan diet.

Soy yoghurt (like soy milk) may not be sold under this name in the European Union .
