A summer roll ( Vietnamese Gỏi cuốn ) is a starter in Vietnamese cuisine . It is similar to the spring roll , which is widespread in large parts of Southeast Asia and is prepared differently depending on the country , but is not fried.

Etymology and history

The Vietnamese Gỏi cuốn means "salad roll". The term nem cuốn is also used in North Vietnam . The term “summer roll” is used in the Anglo-American language area (“summer roll”) and also used in German instead of the Vietnamese term. The dish is known in Cambodia , Laos and Thailand and does not differ significantly from the Vietnamese variant in terms of ingredients and preparation. The origin of the summer roll has not been clarified, but is usually (mostly unsprung) located in China or Vietnam. The cook, cookery journalist and cookbook author Fuchsia Dunlop sees a 7th century Chinese custom of eating vegetables wrapped in flat cakes on the first day of spring as the possible origin of the summer roll.

CNN Travel placed Vietnamese summer rolls in 2011 and 2017 in its World's 50 best foods list at number 30.

The shell of the summer rolls consists of rice wafers that are dipped in warm water to make them supple. An elongated heap of ingredients is built on the circular rice wafer, which is then wrapped in the wafer to create a cylinder-like shape. As a rule, the filling of the summer roll contains rice noodles . The other ingredients are arbitrary; Salad, vegetables, meat and herbs (especially long coriander and mint ) are common, but fish, prawns and fruits are also used depending on the taste. The ingredients of the filling are cut into manageable pieces before use, animal components are fried beforehand. Summer rolls are eaten cold and served with a dip , for example with hoisin sauce , Nước mắm pha (a dip based on fish sauce ) or peanut sauce, outside of Vietnam often with soy sauce .
