Spring rolls ( Indon. & Tag. Lumpia , Dutch: Loempia ; Chinese  春捲  /  春卷 , Pinyin chūnjuǎn ; Vietnamese chả giò ) are an appetizer of Asian cuisine made from special sheets of dough with a variety of different fillings. Some variants are fried in a wok . The non-fried variant is usually referred to as a lucky or summer roll . Spring rolls are common in China , Taiwan , Thailand , Korea , Vietnam , Singapore , Malaysia , Indonesia , Japan, and the Philippines .

Spring rolls are traditionally part of the Chinese New Year , the most important festival day of the year celebrating the beginning of spring. The spring rolls symbolize the silkworms that hatch at this time.

Spring rolls are also eaten at the Qingming Festival, which commemorates the deceased. The filling is said to have originally consisted of remains of the vegetable offerings that were offered to the deceased.

The filling of spring rolls can be different, but include z. B. soy or mung bean sprouts , finely chopped vegetables such as white cabbage , carrots and onions, mushrooms, minced meat and glass noodles . The mixture is steamed with garlic, various spices and soy sauce , about two tablespoons of the filling is wrapped in spring roll dough in the shape of a roll or bag and deeply fried. Various sauces can be served with it. The spring roll dough is usually made from wheat flour.

Vietnam

In Vietnam , fried spring rolls are called nem rán (in the north) or chả giò (in the south) and are served with a lot of salad and a spicy fish sauce. The filling consists of pork, mushrooms, glass noodles , carrots and kohlrabi . There are also vegetarian fillings. As the preparation is very time-consuming, they are usually served on special occasions and family gatherings or eaten in restaurants.

South East Asia

In Indonesia and the Philippines the spring rolls are called lumpia (Dutch spelling: loempia with the same pronunciation), in Singapore popiah . The smaller Thai spring rolls are called Poh pia tod .

In the Philippines, the filling often consists of chopped vegetables and peanuts and a sweet sauce. Un fried these rolls are called lumpiang sariwa . If the filling contains pork based on the Chinese model, it is called lumpia Shanghai . Fish, shrimp , chicken or cheese are sometimes used as filling . Lumpia can be part of a meal or a snack here . The Dutch have taken the small Indonesian spring rolls in greatly enlarged form as a complete meal in the Dutch kitchen .

As a ready meal

Spring rolls are a popular frozen product in Germany . They are mostly pre-fried for preparation in the oven and only need to be thawed and heated. The frozen spring rolls are usually larger than their Chinese counterparts and have a much thicker batter.
