Hoisin sauce
Hoisin sauce is a thick, dark sauce from Chinese , more precisely regional canton cuisine , and Vietnamese cuisine , which is mainly used with meat dishes, for example with suckling pig or Peking duck .
ingredients
Hoisin sauce tastes sweet and quite strong. The main ingredients are fermented soybeans , sugar , wheat flour , garlic , vinegar and chillies . There are also salt and sesame oil . Sometimes it also contains sweet potatoes and five-spice powder .
Surname
The term “hoisin” is a transcription of the Cantonese pronunciation of the Chinese expression 海鮮 / 海鲜 , hǎixiān , Jyutping hoi 2 sin 1 , which literally means “ seafood ”, although they are not part of the sauce. There are speculations that the name goes back to the former use of seafood.
In Vietnamese cuisine , the hoisin sauce is also known as tương đen , literally for "black sauce".
