Dishwasher Salmon (salmon Dishwasher) is an American that using a common household dish washer is prepared. The salmon is poached in a narrow temperature range of 50 to 60 degrees Celsius .

The first reference to the dish can be found in a photograph from 1970. On November 21, 1975, the actor Vincent Price cooked salmon together with Johnny Carson on the American late-night show The Tonight Show in a dishwasher provided. Nick Connellan says in Broadsheet that dishwasher salmon was an American invention of the post-war era, when household appliances became more common. Recipes for dishwasher salmon can be found in North American cookbooks from the 1980s, for example in the Bear soup and Salmon Mousse cookbookAlaska . In 2002, dishwasher salmon was prepared on the Canadian cooking show The Surreal Gourmet , which made the dish more popular.

The dish was published in English-speaking media, such as the Wall Street Journal in 1999   and BBC Radio Solent, the BBC's local radio station for Hampshire , Dorset and the Isle of Wight, in 2008 . The dish is also enjoying growing popularity in German-speaking countries.

preparation

The salmon is first packed as tightly as possible in aluminum foil or vacuum-sealed . Then a program is set in the dishwasher that produces temperatures of around 40 degrees Celsius for moderate cooking or 50 to 60 degrees Celsius for poaching. Temperatures of up to 70 degrees Celsius are sometimes recommended. In the meantime, dishes can also be washed if the food is packed tightly enough. Side dishes such as vegetables or spices can also be prepared with the salmon. The process is similar to that of preparing similar dishes using Sous-vide cooking . Others, on the other hand, advise preparing the dish in the dishwasher without dishes or detergent.

The advantages of the method of preparation are the energy savings if the salmon is prepared parallel to the rinse cycle. The dish is classified as very healthy and the cooking method as gentle, because the fish is cooked slowly in water.

A disadvantage is the possible transfer of harmful substances from the film to the salmon or the penetration of detergent. In addition, a lot of energy is used in the production of the aluminum foil.
