Spaghetti alla puttanesca

Spaghetti alla puttanesca 'Spaghetti the whore style' is apasta dishfrom southern Italy with a hot and spicy tomato sauce .

To prepare, first garlic and pickled anchovies in olive oil is sweating until the anchovies disintegrate. Then tomatoes and hot peperoncini are added, seasoned with pepper and oregano and the sauce is cooked until thick. Finally, pitted, chopped black olives , capers and parsley are added and the sauce is mixed with separately cooked spaghetti .

The origin of the name is unclear. According to one of various anecdotal explanations, it is said to go back to the fact that prostitutes were able to prepare the dish quickly and easily between visits by their clients . According to another explanation, it is related to the fact that Italian brothels in the 1950s - which were then case chiuse (literally: closed houses), houses with closed shutters - were run by the state and prostitutes were only allowed to go shopping once a week and her time was precious. The dish was therefore made from the more durable leftovers in the pantry when supplies were running low.
