Squacquerone

Squacquerone (also squacquero , squacquarone or squaqquerone ) is an Italian cream cheese made from cow's milk .

The cheese is white, its consistency is similar to a mixture of mascarpone and crème fraîche . It comes from the Romagna region and is often eaten with the typical piadina there . It is made fresh and should be eaten within a few days.

Under the name Squacquerone di Romagna, it received the Denominazione d'Origine Protetta seal in 2012 . According to EU regulations, it can only be made in Forli-Cesena , Ravenna , Rimini , Bologna and in some parts of Ferrara from milk of the Romagnola , Frisona italiana and Bruna Alpina races .

The name comes from the dialect Romagnol , which is widespread in Emilia-Romagna, and is derived from the Italian word for "to melt" ( squagliare ).
