Thiaminases are enzymes found in several types of bacteria , in some fish, and in plants such as bracken ( Pteridium aquilinum ). The enzymes, if ingested with food over the long term, can destroy the vitamin B 1 ( thiamine ) in the food and lead to deficiency symptoms ( hypovitaminoses ) and thus to diseases such as beri-beri . Cooking destroys thiaminase.
