Trippa alla fiorentina is a Tuscan tripe dish from the Florence area .

For preparation, onions , carrots and celery are sweated in butter , then mixed with the boiled tripe cut into fine strips and fried. Then tomatoes are added, after which it is allowed to simmer.

One can the court also with additional Parmesan sprinkle and bake au gratin .
