Vitello tonnato

Vitello tonnato (of Italian vitello , veal ' , tonno , tuna' - tonnato with tuna) is from the Piedmont originating Antipasto . This starter of Italian cuisine is thinly sliced veal cooked with white wine and vegetables and coated with a tuna sauce when it is cold.

The finely pureed sauce usually consists of pickled tuna , mayonnaise , a little cooking water for the meat, anchovies and capers , but there are regionally different recipes. The dish is served chilled and marinated and decorated with lemon wedges and capers or caper apples .
