Wolfburn is a whiskey distillery in Thurso , Scotland .
history
The old distillery was founded in 1821 by William Smith & Co. Production was stopped around 1850. In 1872 only ruins were left of the complex.
In 2011 the plans for a new distillery were made not far from the site of the old plant. Distillation began in January 2013.
production
The water of the distillery, which belongs to the Highlands / Northern Highlands region, comes from the Wolf Burn. For the time being, only unpeated malt is used. The distillery has three fermentation vats ( wash backs ) ( 9,000 l each ) made of stainless steel . Two washbacks, which were originally in operation at Caperdonich , were converted into a 57,000 liter cooling water tank and integrated into the production process. Distillation takes place in a coarse still ( wash still ) ( 5,500 l) and a fine still ( spirit still ) ( 3,600 l).
