Plum roaster

Stewed plums is from plums preparing sweet traditional Austro - Bohemian cuisine. It is usually served as an accompaniment to desserts such as Kaiserschmarrn .

In contrast to plum compote , almost no water is used in the preparation of plum roasters , rather the plums are steamed in their own juice. The ingredients are plums, sugar , lemon , cinnamon and cloves . The guiding principles of the Austrian Food Code stipulate an addition of up to 10% of the weight of the fruit, and up to 25% for fruits with sour juice.

An apricot roaster can be prepared in the same way from apricots ; the same applies to the sour cherry roaster , which is made from sour cherries.

The word is also used in the dialect expression "My dear friend and plum roaster!" Which is widespread in parts of Austria and is a joking and admonishing form of address.
