Actinidain is an enzyme found in the kiwi fruit that catalyzes the breakdown of proteins . It causes an allergic reaction in some people and has been identified as the main allergen in kiwi fruit. Technically, actinidain is ideal for breaking down collagen and separating cell types in mixed meat tissues.

Since actinidain contains cysteine in the active center , it is a cysteine ​​protease . Close relatives of the enzyme are found in all ray pen fruits and in the fruits of the cedar tree . Other relatives can be found in pineapple , mango and papaya ( papain ).
