Alice Louise Waters (born April 28, 1944 in Chatham , New Jersey ) is an American restaurateur and co-owner of the Californian restaurant Chez Panisse in Berkeley, which is considered the origin of California cuisine . She also owns Cafe Fanny in West Berkeley. Waters is a pioneer of the organic food movement ( organic food ) in the United States.

Life

Alice Waters calls for the consistent use of fresh and healthy agricultural products that come from the region. Together with Jeremiah Tower , who was head chef at Chez Panisse from 1972 to 1978, she founded this trend. She has written several books on her own and with others that deal with this topic. This includes the cookbook Chez Panisse Cooking , which she wrote together with the Chez Panisse chef at the time, Paul Bertolli . Today she primarily calls for better nutritional education for children. As part of this, she launched the Edible Schoolyard program in Berkeley . Her food education ideas are being pursued by all schools in the Berkeley, California area today. They have met with great interest from the US public.

Alice Waters is primarily committed to using only food that is grown in the region. In their view, the long-range transport of mass-produced food is harmful to the environment and leads to poor quality products for the consumer.
