Alois Traint

Alois Traint (* 1970 in Neunkirchen ) is an Austrian chef.

Career

After completing his apprenticeship as a cook in Hochegg , he cooked in Tyrol and later in the Villa Moser in Vienna with the former TV chef Alois Mattersberger . He was at Toni Mörwald's stove and worked several times at Zum Schwarzen Kameel . Then he was sous-chef in the Vestibül restaurant in the Burgtheater with Christian Domschitz for 21 years . The Walter Bauer restaurant followed .

In 2014 he learned about the planned project of the Japanese-born Viennese by choice Jōji Hattori , a violinist and conductor who wanted to buy a Japanese restaurant as the son of an entrepreneurial family in Vienna. In February 2015 the restaurant Shiki opened in Vienna with Traint as sous chef. In November 2015 he became head chef here. The restaurant has been awarded a Michelin star since March 2018 .

Train has a passion for sharp knives; he owns hundreds of them, some as expensive as a midsize car .
