Arômes au Gène de Marc
Arômes au Gène de Marc or Arôme de Lyon or Arôme lyonnais is a French cheese specialty that is mainly eaten in autumn. A mature cheese wheel , for example Rigotte , Saint-Marcellin , Pélargon or Picodon , is stored for a period of at least a month in a barrel or a large glass full of Marc , a pomace brandy . The aroma of the schnapps permeates and aromatizes it.
Either marc or a nutmeg wine is drunk with the cheese .
Similar to Arômes au Vin Blanc , Le Pitchou or Crottin de Berry à l'Huile d'Olive , the recipe developed from preserving perishable types of cheese.
