Beishan jiujing

The Northern Mountain Rice Wine Book ( Chinese北山 酒 经Beishan jiujing ) from the Northern Song Dynasty is the earliest monograph on rice wine production . The work was written around 1100 by Zhu Yizhong朱 翼 中 ( zi ), that is Zhu Gong (朱 肱) from Wuxi , Zhejiang . It is also known as the Zhu Yizhong Rice Wine Book ( Zhu Yizhong jiujing ).

The "northern mountain" of the book title is on the West Lake near Hangzhou . The work consists of three volumes ( juan ). The first is a general introduction with a historical look back, the second explains the production of fermentation pathogens (qū 曲) and the fermentation technology, the last explains special processes for the production of high quality rice wines.

It is another classic work for rice wine production according to the Qimin yaoshu and an important source for the history of the Chinese food and drink culture.

A sequel to the work was written in 1117. It bears the title Xu Beishan jiujing (续 北山 酒 经; German : continuation of the 'Reiswein-Buch des Nordberg'). It comes from Zhu Gong's friend Li Bao (李 保).
