Tebirkes

Tebirkes (in Jutland and on Funen also Københavnerbirkes ) is a Danish breakfast pastry in Wienerbrød style made from puff pastry (butter, flour, salt, water / milk), coated with whisked egg and sugar and sprinkled with poppy seeds . There is also a variant with remonce (butter, sugar), which gives the filling a caramel-like consistency.

There are numerous variants and names for the Tebirkes:

  • Birkes - without remonce
  • Grovbirkes - without remonce, made from graham flour or coarse kernels
  • Tebirkes - with or without Remonce, also called Smørbirkes.
  • Chokoladebirkes - Tebirkes with chocolate
  • Ostebirkes - Tebirkes with cheese filling
  • Havrebirkes - Grovbirkes based on oats

The dough for Tebirkes can also be made into croissants . If this dough is stretched out and twisted before baking, the resulting pastry is called a Frøsnapper .

origin

Birkes (or berkes ) is an old Danish word for bread baked from wheat flour and sprinkled with poppy seeds, as well as for the poppy seeds themselves. Originally it was used to describe a Jewish Sabbath bread.
