Bruno Paillard is a champagne house founded in 1981 by the company owner of the same name in Reims .

Coming from an old family of winemakers, he learned the trade of wine broker like his father. At the age of 28 he founded his own champagne house, which he equipped with 60 stainless steel tanks and 260 barriques . The house has had its own vineyards since the early 1990s; now 26 ha . Johnson calls it "the youngest of the classic champagne houses". Paillard heads the Lanson champagne house and is also the owner of Château Sarrin in the Côtes de Provence .

The grape varieties Pinot Noir , Chardonnay and Pinot Meunier are cultivated . Paillard worked with maceration under strict temperature control. Depending on the vintage, the wine is drawn off after six to eight weeks. After vinification, it matures in the cellar for three to five years after the harvest and only then comes on the market. The wines only receive about 6 grams of residual sugar from the fruit dosage , which results in a very dry style. The annual production is 600,000 bottles.

The main varieties:

  • Première Cuvée brut (share of total production: 25 to 35%): 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunier
  • Chardonnay Réserve privée brut blanc de blancs (share of total production: 25%): 100% Chardonnay
  • Brut Millésime: 45% Pinot Noir, 36% Chardonnay, 19% Pinot Meunier exclusively from the large vineyards (Grands et Premiers Crus)
