The thorny chicory ( Cichorium spinosum ) is a species of chicory ( Cichorium ) in the sunflower family (Asteraceae).

Cichorium spinosum is a sparrig branched and small ball bushes forming half bush reached, the plant height of only 3.5 to 18 centimeters. The upper branches have no flowers and end in thorn tips. The leaves are glabrous and fleshy, undivided toothed or saw-shaped. The cups are sessile, usually 1–4 in the branches of the stem. The cups consist of 5 to 6 flowers. The envelope is 5 to 8 millimeters in size.

The flowering period extends from June to October.

The number of chromosomes is 2n = 18.

Occurrence

Cichorium spinosum occurs in the Mediterranean area, so in the northeast of Libya, on Cyprus and in Turkey, in Greece, on Crete and in the Aegean Sea, on Sicily, Malta and in Spain. The species grows on rocky coasts, clay areas and mountain pastures. On Crete it occurs up to the mountains and is there at altitudes from 0 to 1700, rarely up to 2100 meters.

The thorny chicory is known in Crete under the name Stamnagathi (σταμναγκάθι) and is an integral part of traditional Cretan cuisine. It is eaten cooked or raw as a salad and together with other ingredients such as meat in stews. In recent years it has also been found as a fashion ingredient in other Greek regions.
