Diet cook

The dietary cook (Engl. Certified Dietary Chef ) is a hospitable industrial upgrading training . At the same time, it represents a specialization of the cook in the treatment of diet-related diseases in the context of nutrition .

There are basically three different degrees:

Each of the three exams has special features that need to be considered when choosing the right degree. The Diet Cook (IHK) is a publicly recognized qualification, but its content is always out of date, as the examination question catalogs are usually only updated every five to seven years. The dietetic trained cook (DGE) is coming under increasing criticism, since modern research results oriented towards the disease pattern run counter to the nutritional recommendations of the DGE. The Certified Dietary Chef (BA) is on the one hand the only internationally oriented degree and is based on the most modern scientific knowledge, but is not a publicly recognized degree, as is the case at an IHK. As a compromise, both the Diet Cook (IHK) and the Certified Dietary Chef (BA) can be taken in a so-called IHK-BA double diploma within a course.

The training to become a diet cook always includes a theoretical and a practical part of the course. The theoretical part includes, among other things, nutrition theory ( food components , energy balances , diets , nutrition ), anatomy (connections between human physiology , organs and their functions, diseases and clinical pictures ) and dietetics (creation of food plans for menus and daily plans, nutritional value calculations ). The practical part that follows includes the practical handling of diet-related diseases. Here, detailed diet plans and menus tailored to the patient are created, which then have to be implemented in practice. The training can be completed full-time or part-time and generally lasts between 2 and 10 months. The diet cook applies his knowledge especially in hospitals , old people's homes , nursing homes , retirement homes , day care centers as well as in upscale gastronomy .

The profession shows parallels to the dietitian . In contrast to the diet cook, however, this is a medical profession .

Switzerland

In Switzerland, the EFZ diet cook is an apprenticeship that builds on the EFZ cook . The training lasts 4 years, of which the first three years correspond to the EFZ chef.
