Dominik Flammer
Dominik Flammer (born December 7, 1966 in St. Gallen ) is a Swiss economist and author. The focus of his work is the history of nutrition in the Alps .
Life
Flammer has been concerned with the history of food, its distribution and trends in the food industry since the 1980s. He was a correspondent for the Swiss Dispatch Agency (SDA) and worked for the Swiss media for twenty years. He is the owner of the Zurich agency Public History Food, which, in cooperation with the partner agency Public History Research, specializes in historical research for the economy and for food history.
As the author of the standard work on Swiss cheese , Flammer has given Swiss cheese makers and their products a new face. The German Gastronomic Academy awarded the book the “Golden Pen”, the highest award in the literary competition, at the Frankfurt Book Fair in 2010, which is the first time since 1986 that this award has gone to Switzerland.
For the book The Culinary Heritage of the Alps , Flammer traveled through the Alps for seven years to research forgotten foods, livestock breeds, recipe traditions, and types of fruit and vegetables.
In parallel to the book series on the culinary heritage of the Alps, Flammer has produced four films on the individual topics of culinary heritage under the direction of the Munich film production company Megaherz : «Urkäse», «Cereals», «Cattle» and «Fish». The films were shot on behalf of Bavarian TV and with the participation of all three national channels on Swiss TV and were released in German, French and Italian.
Flammer is currently in charge of setting up the Culinarium Alpinum, a competence center for alpine cuisine that is being built in cooperation with organizations from agriculture, gastronomy and food production in the former Capuchin monastery in Stans in the canton of Nidwalden .
