Cockscomb

The comb of the comb-hens (Crista carnosa) is a fleshy flap of skin that sits on the head and is particularly pronounced in male animals (cockscomb). The hen comb is usually smaller, but while the cockscomb does not change its size once it has reached, the hen comb is larger during the laying period than during the laying breaks or the moulting .

In the most common form as a single comb or standing comb, the comb has a comb blade which is widened in the front area to form a comb support, has comb teeth at the upper end and ends in the rear area to form a free-standing or resting comb flag. The base of the comb has a middle layer of adipose tissue , which is bordered by connective tissue (stratum laxum). The main part of the comb sheet is made up of the intermediate layer, which consists of mucous substances enclosed by fibrils (fibromucoid tissue), which gives it flexible strength. In the strong blood is dermis and the epidermis . The comb can also form feathers, which in some chicken breeds leads to the formation of a feather bonnet (crista pennarum).

Roosters of some breeding forms of domestic fowls have extreme combs . The comb of leaves or butterflies consists of two serrated leaves lying next to each other, the comb of peas consists of three rows of meat humps, and the comb of roses is a broad, warty bulge tapering back into a thorn. A comb which hangs down laterally is referred to as flabby designated.

Rooster combs for consumption

The combs from the male domestic chicken are used in the kitchen and are considered a delicacy in some circles, but are hardly available in Germany today. In preparation, they are scalded briefly and the thin skin is wiped off with your fingers. Then they are thoroughly watered until they turn white and usually cooked in chicken broth with lemon juice . Depending on the recipe, rooster combs are prepared as ragout or z. B. filled with truffles or farce , breaded or pulled through dough and baked. In the classic kitchen, they are served as a starter or side dish. Rooster combs are part of simple dishes as part of the poultry .

Rooster combs can also be used to extract hyaluronic acid .

Phrase

The idiom someone has a red rooster on the roof means that someone's house is on fire, as blazing flames are visually reminiscent of the rooster’s red crest.

The phrase someone swells the comb also refers to the cockscomb, which swells during courtship and in other states of excitement.
