Herrmann was trained as an industrial clerk in a machine factory in Offenbach. After his return from the war, he joined the " hawks " and the union youth. In 1948 he was employed by the food-pleasure-restaurants union (NGG) in Offenbach am Main . In 1990 he left for reasons of age.

Its main trade union task was collective bargaining policy. During his tenure as second federal chairman, he implemented uniform wage tariffs for blue-collar and white-collar workers, regulations for the humanization of work through free time instead of hardship supplements (e.g. non-shift days) and collectively agreed early retirement.

Herrmann was also a member of the supervisory boards of large food companies.

In 1987 he was awarded the Federal Cross of Merit, 1st class.
