Gefillde , also Gefillde Knepp or Gefillte Klees , are filled potato dumplings made from raw and cooked potatoes, which are especially popular in Saarland and the neighboring Rhineland-Palatinate areas.

The filling of the dumpling can consist of pork or beef, as well as liver sausage. Other ingredients can be fried and ground meat, soaked rolls, diced onions , parsley and leeks . The dish is traditionally served with sauerkraut and bacon - cream - sauce . There are also variants with brown sauce, which are usually prepared for special occasions such as Easter or Christmas. In this traditional miners' dish , both the dumplings and the ingredients for the sauce were made themselves; today, ready-made dumpling dough is mostly used.

Similar dishes based on potato flour, but without a filling, are Hoorische (made from the same dough), flour kneep / Geheirade ( dumplings ) and snowballs ( fluffy , airy potato dumplings).
