Gentiobiose is a disaccharide that consists of two D -glucose units. It is a white, crystalline solid that is soluble in water or hot methanol . Gentiobiose is found in crocin , the compound that gives saffron its color, and amygdalin , a glycoside made from the kernels of various stone fruits .
