Georg Paulus Imhoff (born October 1, 1603 in Nuremberg ; † February 16, 1689 ibid) came from the Imhoff patrician family in the imperial city of Nuremberg .

As the son of Jeremias I. Imhoff (1566–1632) and Catharina (née Muffel), he took over the management of Imhoff's trading house.

In 1634 Imhoff became a councilor and in 1637 a young mayor. From 1675 as the foremost slogan and from 1676 additionally as Reichsschultheiß he took over the two highest offices in the imperial city of Nuremberg,
