Sandrart was a very prolific artist. A total of more than 400 engravings by him are known. In addition to his activities for Nuremberg publishers ( Endter , Felsecker ), he also published illustrated works himself. Above all, he made a name for himself as a portraitist of his contemporaries. Most of his engravings show more or less prominent contemporaries from Nuremberg. Sandrart was also the most expensive engraver in town in his time, and he was in great demand due to his realistic representation.

Many of these engravings were made in collaboration with the poet Sigmund von Birken , who wrote verses for the portraits. He was good friends with Birken, and he also arranged for him to work on artistically illustrated works. The Teutsche Academie of the noble building, picture and painting arts of his uncle Joachim was conceived by him together with Birken.

Jacob's children Susanna Maria (1658–1716) and Johann Jacob (1655–1698) were also known as engravers. Together with the engraver Christoph Weigel (1654–1725), he made the drawings for the 'Passio Domini' from 1693, which was published in Augsburg.
