Viehoff was the son of the farm owner and teacher Heinrich Viehoff. He was Catholic and married to Wilhelma, born Gracher.

Viehoff attended the collegium in Neuss and the grammar school in Düsseldorf. From 1824 he studied philology, mathematics and natural sciences at the University of Bonn , among others with August Wilhelm Schlegel . In 1827 he passed the teaching examination and then completed the probationary year at the grammar school in Düsseldorf. In 1828 he became a teacher at the Progymnasium in Uerdingen and then worked as an educator in noble families, including with the Count of Westphalia. In 1833 he became a grammar school teacher in Emmerich am Rhein, in 1838 first teacher, in 1842 senior teacher and in 1848 professor at the municipal secondary school in Düsseldorf . In 1843 he founded the archive for teaching German in grammar schools, secondary schools and higher education institutions , the first specialist magazine for German teaching. However, the magazine had to be discontinued after a short time because there were no committed supporters.

Still, improving literacy and language teaching remained one of his major concerns. Together with his colleague Ludwig Herrig (1816–1889), he therefore founded the archive for the study of modern languages and literatures in 1846 in order to provide future teachers with a further training organ.

In addition, Viehoff is one of the founders of a new Goethe literature, the basis of which was a thorough study of the Goethe letters.
