Together with his brother Horst, Jörg Weißhaupt played in the 1971/72 season for GDR league club Motor Nordhausen West . At the beginning of the football season 1972/73, both brothers joined the league promoted FC Rot-Weiß Erfurt, the football focus of their region. While brother Horst immediately became a regular player with 24 league appearances, Jörg Weißhaupt was only used for eight minutes on the 9th league matchday. In the game between FC Rot-Weiß and 1. FC Magdeburg he came on for his brother and scored the 3-0 final score after three minutes. Even after that, he was only called up sporadically as a substitute. In his first league season he played ten point games as a striker, of which only three encounters over 90 minutes. After another mixed season in 1973/74 with only 15 league games, Jörg Weißhaupt made his breakthrough in the league in 1974/75 with 25 point matches. With seven goals, he was Erfurt's second best scorer behind his brother. In 1975/76 he was able to outstrip his brother with 26 point games, who had only made 23 appearances. In contrast, the 1976/77 season was disappointing again for Jörg Weißhaupt, he only made short appearances in five league games between the 4th and 19th matchday. It was the last league game at FC Rot-Weiß Erfurt. In total, Jörg Weißhaupt was featured in the major league 82 times and scored 18 goals. Usually he was used as a center forward.

For the 1977/78 season, both Weißhaupt brothers moved back to Motor Nordhausen and also ended their careers as competitive football players together in 1985. Jörg Weißhaupt later trained the first team of the Nordhausen successor club FSV Wacker 90 and was its sporting director until 2005. On November 4, 2010 Jörg Weißhaupt took over the training of the Thuringian league club SC Leinefelde 1912 , where he was released on May 26, 2011.
