A hunting knife is a knife that the hunter needs for a variety of tasks in the hunt and for the eventual killing of and for work on the game that has been shot. In principle, almost any sturdy knife is suitable for this. Nevertheless, special forms of hunting knives have developed over time for the various tasks . There are also regional characteristics in terms of name and type.

Hunting knives can basically be designed as folding knives or fixed knives. Fixed knives are preferred for reasons of stability, safety and ease of cleaning. The blade length is usually 10–15 cm. Exceptions are the deer catcher and the hunting plaute / woad leaf , these can have total lengths of over 70 cm. Since the hunter also needs different knives for the different jobs, these are often carried as hunting cutlery in a common sheath . Stable and non-slip handles are used here, which are often made of wood or deer horn . There are foldable hunting knives that have several inserted blades or so-called interchangeable blades that are exchanged depending on use.

The main task of hunting knives is to break open (remove the entrails) of hunted animals. Since the hunter often only has one knife with him, it must also be suitable for catching (stab in the chest, heart) or nodding (stab in the spinal cord on the skull) of game that has been shot. When skinning ("knocking out of the ceiling", "skinning", "cutting down") and cutting, specialized knives are usually used (actually like the butcher's / butcher), provided that such work is carried out in suitable rooms.

Quite a few hunters bring a special " breaker knife" to the universal knife (the blade can be part of a folding knife), the typical features of which are an inwardly curved blade and a blunt point (often designed as a "button"). After opening the body cavity of the hunted animal, it is guided under the skin with the cutting edge upwards. This technique and the blunt tip avoid damaging the innards, which can lead to a reduction in the quality of the meat.

Special skinning and cutting knives are only brought along for hunting if the animal is processed in the wild.
